This is a recipe that I found in real simple and I quite enjoy it. Here's the
link to the recipe page for the first dish. The main dish is couscous with an apricot chicken salad. If you're making it in an off season for apricots, then I suggest using apples. Serves about 5 people, and is light and refreshing.
The dessert is an apricot butterscotch sauce over vanilla ice cream. Here's the

Both dishes go nicely with wine, but if you're wanting to stick with the apricot theme, then I would suggest an apricot ale.
